Caprese Grilled Cheese

For lunch today, I made a Caprese Grilled Cheese sandwich. It is a perfect, easy summer lunch.

First, slice some fresh mozzarella. Make it as thick as you'd like. You need enough to cover a slice of bread. I used three slices.


Next, chop up a tomato or two roma tomatoes.


Then, julienne two basil leaves.


Mix the tomatoes and basil. Drizzle olive oil over the mixture.


Put a small pan on the stove on medium heat. Butter your bread, just like you would for a regular grilled cheese sandwich. When your pan is hot, add one slice of bread, butter side down. Add the cheese, tomato mixture, and other slice of bread, butter side up. Cook until bread is golden, then flip over. The sandwich will be ready when both sides are golden and the cheese is melted. Remove from heat and enjoy.

3 slices of mozzarella
1 tomato
2 basil leaves, julienned
